Whole bunches or parts of bunches of intensely botrytised grapes were selected and picked between 21 October and 13 November.
2/3 of these clusters were pressed directly, the rest was destemmed followed by a short skin contact before pressing. Fermentation in stainless steel vats.
2/3 of the wine was aged for 6 months in oak barrels of 225 litres, the whole lot was blended in May 2020 and continued its ageing in tank. Bottled in April 2022.
