With this wine the winery had to risk a lot, waiting until November for the grapes to ripen. The warm vintage produced a fine sweet wine with a unique character. This wine is a perfect demonstration of why Tokaj is so special. Due to the rapid ripening, the dry wines were harvested by mid-September. By this time, the acidity was very low and the PH had risen. The special conditions of Tokaj meant that the grapes lost more water each day, the acid and sugar concentration increased, and the selected bunches of shrivelled grapes were harvested to produce a beautiful base wine. The destemmed, shrivelled grapes were soaked overnight, then after pressing and settling, they were put into barrels for 6 months.
